Artichoke-Spinach Baked Chicken

Ingredients
- 1 (15-oz) can or jar artichoke hearts, drained and chopped
- 3/4 cup chopped fresh spinach
- 3/4 cup grated Parmesan cheese
- 3/4 cup olive oil mayonnaise
- 1/2 tsp garlic pepper
- 4 boneless, skinless chicken breasts
Instructions
- Preheat oven to 375 degrees. Spray a 9×13-inch baking dish with non=stick cooking spray.
- Combine artichoke hearts, spinach, Parmesan, mayonnaise, and garlic pepper in a medium bowl. Mix until thoroughly combined.
- Place chicken in baking dish; cover evenly with artichoke mixture. Bake, uncovered, 35-40 minutes or until chicken is no longer pink in the center and juices run clear.

Notes
If you don’t have garlic pepper, simply use 1/2 tsp garlic powder and generously pepper the sauce.
You can use 4 chicken thighs, bone-in, just increase baking time to 50-55 minutes. You can turn the oven down to 325 degrees after 45 minutes to prevent over-browning.
